Walking Taco Casserole

Instructions

Brown beef: Heat cast iron until smoking hot. Brown beef + onion in single layer → drain 90% fat (save 1 tbsp). Add chilies → sauté 2 mins. Stir in enchilada sauce + cream cheese + sorghum → simmer 3 mins. Scrape fond.

Layer: Grease 9×13 pan with bacon grease. Bottom: Fritos (frozen) → press gently. Middle: Meat mixture. Top: Cheese → press lightly.

Bake: 175°C lowest rack 15-20 mins → rest 15 mins off heat.

Serve: Scoop into pre-warmed bowls. Top with lettuce + tomato + salsa + sour cream.

Notes

Critical: Never thaw Fritos—thawed = soggy disaster.

Always rest casserole 15 mins—steam = soggy crust.

Tools: Cast iron skillet, 9×13 pan, wooden spoon.
