Instructions:
Season Chicken: Season 4 boneless, skinless chicken breasts with 1 teaspoon of garlic powder, 1 teaspoon of dried thyme, salt, and freshly ground black pepper to taste. Place the seasoned chicken in the bottom of a slow cooker.
Cook Bacon: In a skillet over medium heat, cook 6 slices of bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into small pieces.
Sauté Aromatics: In the same skillet with the bacon grease, sauté 1 small onion (finely chopped) until soft, about 3 minutes. Add 2 cloves of minced garlic and cook for an additional minute.
Deglaze Skillet: Deglaze the skillet with 1 cup of chicken broth, scraping up any browned bits from the bottom. Pour this flavorful mixture over the chicken in the slow cooker.
Cook Chicken: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Prepare Sauce: In a bowl, mix 1 cup of heavy cream with 1 tablespoon of all-purpose flour until smooth. Stir this mixture into the slow cooker along with the crumbled bacon. Cook on high for an additional 25-30 minutes, until the sauce thickens slightly.
Add Creamy Touch: Just before serving, stir in ½ cup of sour cream and 1 cup of shredded cheddar cheese until the cheese melts and the sauce is creamy.
Garnish and Serve: Garnish the Slow Cooker Creamy Bacon Chicken with chopped fresh parsley for a burst of color and flavor. Serve warm and enjoy this delicious dish!
