In a skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.

Add the diced onion to the skillet and cook until softened, about 3 minutes.

Stir in the taco seasoning and water, and let it simmer for another 5 minutes.

In a large bowl, mix the diced tomatoes with green chilies, cream of mushroom soup, cream of chicken soup, corn, black beans, and 1/2 cup shredded cheddar cheese.

Layer 2 cups of crushed Doritos at the bottom of the slow cooker.

Spread half of the soup mixture over the Doritos.

Add the ground beef mixture over the soup layer.

Repeat with another layer of 2 cups crushed Doritos and the remaining soup mixture.

Top with the remaining shredded cheddar cheese.

Cover and cook on low for 4 hours or until heated through and bubbly.

Serve hot, garnished with extra Doritos on top for added crunch, if desired.
Variations & Tips
You can easily swap out the ground beef for ground turkey or chicken for a leaner version. Adding a layer of sautéed bell peppers can introduce a sweet crunch and more color to the dish. For a spicier kick, consider using spicy Doritos or adding a dash of hot sauce to the soup mixture. If you’re looking to make it a bit more wholesome, you could mix in some cooked quinoa or brown rice along with the ground beef mixture.
