1 tablespoon coconut oil

1 small yellow onion, chopped

3 cloves garlic, minced

1 tablespoon freshly grated ginger

1 tablespoon red curry paste

1 1/2 teaspoons ground turmeric

1/2 teaspoon ground cumin

1/4 teaspoon cayenne pepper (optional)

1 medium butternut squash, peeled, seeded and cubed (about 4 cups)

3/4 cup red lentils, rinsed
-
1 (15 oz) can light coconut milk
-
2 1/2 cups vegetable broth
-
1/2 teaspoon salt, or to taste

Freshly ground black pepper, to taste

Juice of 1/2 lime

Fresh cilantro and chopped peanuts for garnish (optional)
Directions:

Heat coconut oil in a large pot over medium heat. Add onion and sauté for 3-4 minutes until translucent.

Stir in garlic, ginger, red curry paste, turmeric, cumin, and cayenne. Cook for 30 seconds to release aromas.

Add in cubed butternut squash, red lentils, coconut milk, and vegetable broth. Stir well and bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes, or until squash is fork-tender and lentils are cooked.
