Ingredients

Make sure you have everything ready:

4 cups of cooked and mashed sweet potato

2 tablespoons of butter

1/4 cup of  milk

Salt and pepper to taste

2 cups of sautéed ground beef

1/4 cup of chopped parsley

1/4 cup of grated Parmesan cheese

1/4 cup of breadcrumbs

Instructions

Start by preparing the sweet potatoes. Peel and cube them, then boil until tender. Drain and mash them until smooth.

Add the butter, milk, salt, and pepper, stirring until everything is well combined and creamy. Set this mixture aside while you prepare the filling.

In a separate pan, sauté the ground beef over medium heat until fully cooked, breaking it up into small pieces as it cooks.

Once browned, drain any excess fat and set the meat aside to cool slightly.

After the beef has cooled, mix it with the chopped parsley, Parmesan cheese, and breadcrumbs in a large bowl. Stir well until everything is evenly incorporated.

Now, prepare your working surface by laying out a clean kitchen towel or plastic wrap. Spread a thin layer of the mashed sweet potato onto the surface.

leaving some space on the edges for rolling. Make sure to spread it evenly, forming a rectangle shape.

Place the seasoned minced meat mixture over the sweet potato layer, ensuring it covers the sweet potato evenly.

Then, carefully roll the sweet potato and minced meat mixture, using the towel or wrap to help you roll it tightly but gently. The goal is to make a uniform cylinder.

Once rolled, transfer the rocambole onto a baking dish. You can optionally top it with additional grated cheese for extra flavor.

Bake the dish at 375°F (190°C) for about 20-25 minutes or until golden and heated through.

Once baked, remove the rocambole from the oven and let it rest for a few minutes before slicing and serving.
