Ingredients:
Peppers & Filling:
6 organic green bell peppers
1 lb grass-fed ground beef
1 sweet onion
1 box Rice-A-Roni Spanish Rice
1 can (16oz) San Marzano tomato sauce
Cheese & Flavor:
1 tsp organic cane sugar
1 can (14.5oz) fire-roasted tomatoes
1 cup sharp cheddar cheese
Instructions:
Prep Peppers:
Cut tops off bell peppers; remove seeds.
Parboil 5 mins in Dutch oven. Drain → place in baking dish.
Cook Filling:
Brown ground beef + onion in same pot. Drain.
Prepare Rice-A-Roni according to package (use fire-roasted tomatoes for liquid).
Mix rice + beef.
Stuff & Sauce:
Fill peppers with mixture.
Mix tomato sauce + sugar → pour around peppers.
Bake & Cheese:
Cover → bake 35 mins at 350°F.
Uncover → top with cheddar cheese.
Bake 5 more mins until melted.
