Special Fruit Pavé

1. Prepare the Ganache

  • Place the chopped chocolate in a heatproof bowl.

  • Heat 1/2 cup heavy cream in a saucepan until simmering.

  • Pour hot cream over the chocolate and let sit for 1 minute.

  • Whisk gently until smooth and melted.

  • Stir in sweetener, vanilla, and butter. Let cool to room temperature.

2. Whip the Cream

  • In a separate bowl, whip the remaining heavy cream until soft peaks form.

3. Combine

  • Gently fold the cooled ganache into the whipped cream, keeping the mixture light and airy.

4. Assemble the Pavé

  • Line a loaf pan with plastic wrap, leaving some overhang.

  • Arrange a layer of sliced fruits on the bottom.

  • Spread half the mousse over the fruits.

  • Add another layer of sliced fruits.

  • Spread the remaining mousse evenly on top.

5. Chill

  • Refrigerate for at least 4 hours, or until firm.

6. Serve

  • Lift the pavé from the pan using the plastic wrap overhang.

  • Garnish with chocolate shavings, cocoa powder, or extra fruits.

  • Slice into thick portions and serve chilled.
