Zuppa Toscana (Tuscan Soup)

Ingredients
- 1 lb Italian sausage
- ½ tsp crushed red pepper flakes
- 1 large yellow onion, chopped
- 3 garlic cloves, minced
- 6 cups chicken broth
- 5 medium russet potatoes, thinly sliced
- 4 cups chopped kale
- 1 cup heavy cream
- Salt and pepper, to taste
Instructions
1. Cook the Sausage
- Heat a large pot over medium heat. Add the sausage and cook until browned, breaking it into small pieces as it cooks.
- Sprinkle the crushed red pepper flakes over the sausage and mix well.
- Remove the sausage from the pot and set aside, leaving the juices in the pot.
