
Roasted Carrots with Whipped Ricotta and Hot Honey
Preheat the oven to 425°F (220°C).
Toss the carrots with 1 tablespoon olive oil, 1/2 teaspoon salt, and 1 1/2 teaspoons fresh thyme in a large mixing bowl.
Spread the seasoned carrots in a single layer on a baking sheet.
Roast the carrots for 20-30 minutes or until tender and slightly caramelized, tossing halfway through.
While the carrots are roasting, combine ricotta cheese, olive oil, lemon zest, lemon juice, and salt in a food processor.
Pulse until smooth and creamy.
Once the carrots are done, arrange them on a serving platter.
Spoon dollops of whipped ricotta onto the carrots.
Drizzle with hot honey and serve immediately.

- For a spicier dish, add more hot honey or red pepper flakes to the carrots.
- You can use different herbs, such as rosemary or oregano.
