Directions:
Cook the Noodles:
In a large pot, bring salted water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
Brown the Ground Beef:
In a large skillet over medium heat, cook the ground beef, diced onion, and bell pepper until the beef is browned and the vegetables are tender. Drain any excess grease. Stir in the garlic powder, onion powder, salt, and pepper.
Combine with Sauce:
Add the tomato sauce and diced tomatoes to the beef mixture. Simmer for 10 minutes to let the flavors meld together.
Layer the Casserole:
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray. Spread half of the cooked egg noodles on the bottom of the dish. Top with half of the beef mixture, followed by half of the sour cream. Repeat the layers with the remaining noodles, beef mixture, and sour cream.
Add Cheese:
Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
Bake:
Bake the casserole in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Serve:
Let the casserole cool slightly before serving. Enjoy this hearty, comforting Poor Man’s Husband Casserole!
