Incorporate Powdered Sugar Gradually mix in powdered sugar, 1 cup at a time, until a thick dough forms. Add more if needed, in 1 tablespoon increments.
Shape the Candy Form the dough into a ball and dust it with powdered sugar. Roll the dough into a 1/8-inch thick rectangle on a sheet of wax or parchment paper. Trim to 10×12 inches.
Spread Peanut Butter Generously sprinkle powdered sugar over the dough, then spread peanut butter evenly. Roll the dough tightly long-side to long-side, jelly-roll style. Wrap in parchment and freeze for 1 hour.
Slice and Serve After freezing, cut the roll into 1/4-inch thick slices. Serve and savor the Old Fashioned Potato Candy. Leftovers can be stored in an airtight container in the refrigerator.
