Instructions
Preheat your oven to 375°F (190°C).
Roll out the pie crust and line a 9-inch pie dish. Trim any excess dough and crimp the edges.
In a skillet, heat olive oil over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Sauté until softened.
Add the ground sausage to the skillet, breaking it up with a spatula. Cook until browned and cooked through.
Stir in the spinach leaves and cook until wilted. Remove from heat.
In a bowl, whisk together eggs, heavy cream, salt, and black pepper.
Layer the cooked sausage mixture onto the pie crust. Sprinkle Monterey Jack and cheddar cheese on top.
Pour the egg mixture evenly over the filling.
Place the pie dish on a baking sheet to catch any spills. Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is golden brown.
Allow the pie to cool slightly before slicing and serving.
