Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In a separate large bowl, cream butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Alternately add the dry ingredients and buttermilk to the butter mixture, beginning and ending with the dry ingredients.
  6. Stir in the hot coffee until just combined. The batter will be thin, but that’s normal.
  7. Divide the batter evenly among the cupcake liners, filling each about ⅔ full.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  9. For the frosting, beat butter until creamy, then gradually add powdered sugar.
  10. Mix in tonic water and vanilla extract, beating until fluffy.
  11. Divide the frosting into separate bowls and tint with neon food colors.
  12. Pipe frosting onto cooled cupcakes using a star tip, alternating colors for a swirled effect.
  13. Dust with edible glow dust and add neon sprinkles for extra glow.
