Mexican Corn Dip (Fiesta Corn Dip)

Ingredients:

2 cans Mexicorn (drained)

1 can Rotel (regular or hot, drained)

2 cups shredded cheddar cheese

8 green onions (sliced)

1 cup mayonnaise

8 oz sour cream

1 bunch cilantro (chopped)

Instructions:

Step 1: Mix the Base

  1. In a large mixing bowl, combine the mayonnaise and sour cream. Stir until smooth.

Step 2: Add Ingredients

  1. Add the drained Mexicorn and Rotel to the mixture.
  2. Stir in the shredded cheddar cheese and sliced green onions.

Step 3: Incorporate Cilantro

  1. Chop the cilantro finely and mix it into the dip for a fresh burst of flavor.

Step 4: Chill and Serve

  1. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
