Instructions:
Sauté Aromatics: In a large pot, heat olive oil over medium-high heat. Add diced onions and cook until translucent. Stir in minced garlic and cook until fragrant.
Brown the Beef: Add ground beef to the pot and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
Add Tomatoes and Broth: Stir in tomato paste, crushed tomatoes, and beef broth. Mix well and bring to a simmer.
Season and Simmer: Add chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and pepper. Stir to combine, then reduce heat and simmer uncovered for about an hour, stirring occasionally.
Add Beans: Stir in kidney beans and pinto beans. Continue to simmer for an additional 30 minutes to allow flavors to meld.
Adjust Seasoning and Serve: Taste and adjust seasoning if necessary. Serve hot with optional garnishes.
