Loaded Taco Beef Casserole

Ingredients

  • 1 pound lean ground beef
  • 1 packet taco seasoning mix 1 ounce
  • 1 cup salsa
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 2 cups crushed tortilla chips divided
  • 2 cups shredded cheddar cheese divided
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1/4 cup fresh cilantro chopped (optional)

Instructions

  • Preheat oven to 350°F.
  • In a skillet over medium heat, cook ground beef until browned, 5-7 minutes. Drain excess fat.
  • Stir in taco seasoning and salsa. Simmer 2-3 minutes until thickened.
  • In a bowl, mix together cooked beef, black beans, and corn.
  • Spread 1 cup crushed tortilla chips in a greased 9×13 baking dish. Top with beef mixture.
  • Sprinkle 1 cup cheddar cheese over top.
  • Add remaining 1 cup tortilla chips, pressing lightly into cheese.
  • Top with remaining 1 cup cheddar cheese.
  • Bake 20-25 minutes until hot and bubbly.
  • Remove from oven and top with olives, green onions and cilantro (if using).
  • Let sit 5 minutes before serving.
