Directions:
Heat olive oil and butter in a skillet over medium-high heat. Season steaks with salt and pepper.
Sear steaks for 3-4 minutes per side for medium-rare, or cook to your preferred doneness. Remove steaks and set aside to rest.
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
Lower the heat and pour in heavy cream and stock. Stir in Dijon mustard, thyme, salt, and pepper. Let the sauce simmer for 3-4 minutes until slightly thickened.
Return the steaks to the skillet and spoon the sauce over them. Let them warm for 1-2 minutes.
Serve steaks topped with the creamy garlic sauce and garnish with fresh parsley.
