Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking dish lightly with butter or cooking spray.
  2. Prepare Blackberries:
    • Wash the fresh blackberries thoroughly under cold water and pat them dry gently with paper towels.
  3. Mix Blackberries with Sugar:
    • In a large mixing bowl, combine the blackberries with 1/2 cup of granulated sugar. Toss gently until the blackberries are coated evenly. Set aside.
  4. Make Cobbler Dough:
    • In another bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt.
    • Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  5. Combine Wet Ingredients:
    • In a small bowl, mix together the milk, vanilla extract, and lemon zest.
  6. Form Dough:
    • Pour the milk mixture into the flour mixture. Stir until just combined and a soft dough forms.
  7. Assemble Cobbler:
    • Spread the sugared blackberries evenly in the prepared baking dish.
    • Drop spoonfuls of the dough mixture over the blackberries, covering them as much as possible.
  8. Bake:
    • Sprinkle ground cinnamon over the top of the dough.
    • Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the cobbler topping is golden brown and the blackberries are bubbling.
