
I’ve been making these for years and people lose their mind over them every time I make this
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking dish lightly with butter or cooking spray.
- Prepare Blackberries:
- Wash the fresh blackberries thoroughly under cold water and pat them dry gently with paper towels.
- Mix Blackberries with Sugar:
- In a large mixing bowl, combine the blackberries with 1/2 cup of granulated sugar. Toss gently until the blackberries are coated evenly. Set aside.
- Make Cobbler Dough:
- In another bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Combine Wet Ingredients:
- In a small bowl, mix together the milk, vanilla extract, and lemon zest.
- Form Dough:
- Pour the milk mixture into the flour mixture. Stir until just combined and a soft dough forms.
- Assemble Cobbler:
- Spread the sugared blackberries evenly in the prepared baking dish.
- Drop spoonfuls of the dough mixture over the blackberries, covering them as much as possible.
- Bake:
- Sprinkle ground cinnamon over the top of the dough.
- Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the cobbler topping is golden brown and the blackberries are bubbling.
- Serve:
- Remove from the oven and let it cool slightly before serving.
- Serve warm, optionally with a scoop of vanilla ice cream or whipped cream.
