Preheat the Oven
Preheat your oven to 190°C (375°F). Line baking sheets with parchment paper or silicone mats.
Prepare the Dough
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Gently fold in the diced peaches and cinnamon (if using). Be careful not to overmix.
Scoop and Bake
Use a cookie scoop or tablespoon to drop rounded portions of dough onto the prepared baking sheets, spacing them about 5 cm (2 inches) apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set.
Cool and Serve
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
