1. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
Roughly chop the peanuts and hazelnuts.
2. In a large bowl, mix the oats, chopped nuts, pumpkin seeds, sunflower seeds, sesame seeds, dried cranberries, raisins, cinnamon, and salt.
3. In another bowl, mash the bananas until smooth. Stir in the honey or maple syrup and vanilla extract.
4. Combine the wet ingredients with the dry ingredients, stirring until fully mixed.
5. Scoop tablespoons of the mixture onto the prepared baking tray, flattening slightly with the back of a spoon.
6. Bake for 12-15 minutes or until the cookies are golden brown around the edges.
6. Let cool on a wire rack before storing in an airtight container.
