Preheat & Prepare the Baking Dish
Preheat oven to 350°F (175°C).
Grease a 9×13-inch baking dish with butter or nonstick spray.
Mix the Batter
In a large mixing bowl, whisk together flour, sugar, baking soda, salt, and vanilla extract.
Add the eggs and crushed pineapple (including the juice) and stir until just combined. (Do not overmix—this keeps the cake tender!)
If using, fold in chopped walnuts or shredded coconut for extra flavor.
Bake Until Golden & Fluffy
Pour the batter into the prepared baking dish and spread evenly.
Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Remove from oven and let cool for 15 minutes before adding frosting or glaze.

✔ 1 (8-oz) block cream cheese, softened
✔ ½ cup butter, softened
✔ 2 cups powdered sugar
✔ 1 tsp vanilla extract
✔ ½ cup chopped pecans (optional)
Beat cream cheese and butter together until smooth.
