Hawaiian pineapple cake!!!

Directions:

  1. Preheat oven to 180°C/350°F/Gas 4 and grease a 9 x 13 inch (33 cm x 23 cm) baking tray.

  2. Mix together flour, sugar, baking powder, eggs, chopped pineapple with juice, coconut, and walnuts. Use your hands in a large bowl until well blended.

  3. Transfer the baking mixture to the greased pan.

  4. Bake for 45 minutes until cooked through.

  5. Cool completely in the pan.

  6. Using an electric mixer, blend the cream cheese in a medium bowl until creamy.

  7. Add butter, powdered sugar, vanilla extract, and salt. Blend with the mixer until smooth.

  8. Spread the cream cheese over the cooled cake and sprinkle with chopped walnuts.

  9. Cut into 24 servings and eat immediately. Or wrap the cake (no cuts) and refrigerate before serving.
