Instructions
Step 1: Marinate the Chicken
1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, cumin, paprika, salt, and pepper.
2. Add the chicken and toss to coat. Cover and marinate for at least 30 minutes (or overnight for best flavor)
Step 2: Make the Tzatziki Sauce
3. Grate the cucumber and squeeze out excess water using a towel.
4. In a bowl, mix Greek yogurt, cucumber, lemon juice, olive oil, garlic, dill, salt, and pepper. Refrigerate until ready to serve.
Step 3: Cook the Chicken
5. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown and cooked through (internal temp: 165°F/74°C).
6. Let the chicken rest for 5 minutes, then slice into strips.
Step 4: Assemble the Gyros
7. Warm the pita bread and fill each with chicken, lettuce, tomatoes, onions, and tzatziki sauce. Sprinkle with feta cheese, if using.
Recipe Notes & Tips
Marinating time: The longer, the better! Overnight marinating gives the best flavor.
Cooking options: Grill, pan-fry, or bake at 400°F (200°C) for 20-25 minutes.
Make it keto-friendly: Use low-carb wraps or lettuce wraps instead of pita.
Storage: Keep cooked chicken in the fridge for up to 4 days. Tzatziki stays fresh for 2-3 days.
