GARLIC PARMESAN ROASTED POTATOES

Ingredients
- 2 lbs baby potatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp paprika
- Salt and black pepper, to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
- Prepare the Potatoes: In a large mixing bowl, combine the halved baby potatoes, olive oil, minced garlic, Parmesan cheese, dried oregano, dried thyme, paprika, salt, and black pepper. Toss until the potatoes are evenly coated with the seasoning mixture.
- Arrange on Baking Sheet: Spread the potatoes out in a single layer on the prepared baking sheet, cut side down for maximum crispiness.
- Roast: Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the edges. Stir halfway through cooking for even browning.
- Garnish and Serve: Remove the potatoes from the oven and sprinkle with chopped fresh parsley. Serve hot.
