
Garlic Parmesan Chicken Meatloaf
Preheat oven to 375°F. Mix all ingredients in a large bowl. Form into a loaf and place on a lined baking sheet. Brush with olive oil and bake for 45–50 minutes until golden and cooked through. Add mozzarella in the last 10 minutes if using. Rest, slice, and serve.
Notes
For extra flavor, sauté onion and garlic before mixing. Mozzarella topping is optional but adds cheesy goodness. Leftovers store well for up to 3 days in the fridge.
