Frito Taco Casserole

Instructions

Preheat oven to 325°F and spray a 9×13 pan with cooking spray.

In a skillet, brown the meat and onion. Add Rotel and taco seasoning. Simmer until liquid evaporates.

Add black beans and cream cheese. Stir until cream cheese is melted and combined. Stir in enchilada sauce.

Place half of the Fritos in the bottom of the prepared pan. Top with half of the meat mixture and half of the shredded cheese.

Repeat layers with the remaining chips, meat, and cheese.

Bake for 20 minutes or until cheese is melted and casserole is heated through.
