Ingredients
4 boneless, skinless chicken breasts
1 cup roasted red peppers, sliced
1 ½ cups fresh spinach, wilted
1 cup shredded mozzarella cheese
1 tsp garlic powder
1 tsp Italian seasoning
1 tbsp olive oil
Salt and black pepper to taste
Toothpicks or kitchen twine to secure (optional: fresh parsley for garnish)
Instructions
Slice chicken breasts to create pockets. Season with spices. Stuff with spinach, roasted red peppers, and mozzarella. Secure with toothpicks. Sear in olive oil, then bake at 375°F for 20–25 minutes until cooked through. Garnish and serve.
