Everyone calls it ‘Fiesta in a Pan’ – because every bite feels like a mini celebration!

Instructions:

Preheat Oven & Brown Beef: Preheat your oven to 350°F (175°C). In a large skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat from the skillet.

Season Beef Mixture: Add the taco seasoning packet and salsa to the browned beef, stirring to combine. Let the mixture simmer for a few minutes until it thickens slightly.

Combine Beef, Beans, and Corn: In a large mixing bowl, combine the seasoned beef mixture with the drained and rinsed black beans and frozen corn. Stir well to combine.

Layer the Casserole:

Spread half of the crushed tortilla chips evenly in the bottom of a 9×13-inch baking dish.

Layer the beef, black bean, and corn mixture evenly over the chips.

Sprinkle with half of the shredded cheddar cheese.

Add the remaining crushed tortilla chips on top of the cheese layer, followed by the rest of the shredded cheddar cheese.

Sprinkle the sliced black olives and chopped green onions over the very top of the casserole.

Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is completely melted and bubbly, and the casserole is heated through.

Cool & Garnish: Remove from the oven and let it cool slightly before serving. Garnish with chopped fresh cilantro, if desired.
