Prepare the Salmon: Cut the salmon fillets into bite-sized cubes, about 1 inch each. Pat dry with paper towels to remove excess moisture.

Set Up Breading Station: In three separate shallow bowls, place the cornstarch in the first bowl, beaten eggs in the second, and panko breadcrumbs mixed with salt, pepper, garlic powder, and paprika in the third.

Bread the Salmon: Dip each salmon cube first in cornstarch, coating it evenly. Shake off any excess, then dip it into the beaten egg, and finally coat it well with the panko mixture.

Repeat for all the salmon pieces.

Fry the Bites: In a large skillet, heat enough oil over medium heat for frying (about 1/4 inch deep).

Once the oil is hot, carefully place the breaded salmon bites in a single layer in the pan.

Fry for about 3-4 minutes on each side, or until golden brown and cooked through.
