In a bowl, combine chicken, soy sauce, and cornstarch. Mix well and set aside.

Heat oil in a large skillet or wok over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5–7 minutes. Remove from pan and set aside.

Add white parts of green onions, garlic, and ginger to the pan. Cook for 1–2 minutes, or until fragrant.

Pour in chicken broth and honey. Bring to a simmer, scraping any browned bits from the bottom of the pan.

Return chicken to the pan. Cook for another 1–2 minutes, or until heated through.
