Preheat the oven to 400°F. Line a large rimmed baking sheet with parchment paper or foil.

Place the sliced potatoes in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss until the potatoes are evenly coated.

Arrange the potatoes in a single layer on the prepared baking sheet. Scatter the chopped bacon evenly over the top.

Bake for 30-35 minutes, tossing halfway, until the potatoes are golden brown and crispy and the bacon is cooked through.

Remove pan from the oven. Let cool for 5 minutes before garnishing with chopped chives or parsley. Serve warm.
