Instructions:
1. Cook the Chicken:
- Season the chicken breasts with salt, pepper, paprika, and garlic powder (if using).
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken and cook for about 6-7 minutes per side, or until golden brown and fully cooked through (internal temperature should reach 165°F or 74°C).
- Once cooked, remove the chicken from the skillet and set it aside to rest. Slice it into thin strips or bite-sized pieces once it’s cool enough to handle.
2. Cook the Pasta:
- While the chicken is cooking, bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions (usually about 8-10 minutes).
- Drain the pasta, reserving about 1/2 cup of pasta water. Set the pasta aside.
3. Make the Sauce:
- In the same skillet you used for the chicken, melt 2 tablespoons of butter over medium heat.
- Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer, and cook for about 3-4 minutes until it thickens slightly.
- Stir in the Parmesan cheese and continue to cook for another 2-3 minutes until the sauce is smooth and creamy.
- Season with salt, pepper, and red pepper flakes (if using). Taste and adjust seasonings as needed.
4. Combine the Chicken, Pasta, and Sauce:
- Add the cooked rotini pasta to the sauce, tossing to coat it evenly. If the sauce is too thick, you can add a bit of the reserved pasta water to reach your desired consistency.
- Add the sliced chicken to the skillet, stirring to combine and heat through.
5. Serve:
- Divide the creamy chicken and pasta among plates.
- Garnish with extra Parmesan cheese and a sprinkle of fresh parsley.
- Serve hot and enjoy!
Tips:
- Make it lighter: You can substitute half-and-half or whole milk for heavy cream to reduce the richness, but the sauce will be a little thinner.
- Add vegetables: For extra color and flavor, consider adding spinach, mushrooms, or broccoli to the dish.
- More garlic: If you love garlic, you can increase the garlic to 6-8 cloves for a stronger flavor.
