This recipe works best with whole milk cottage cheese with a high protein content. Aim for brands with 14g of protein per ½ cup, such as Good Culture brand. Lower protein cottage cheese may yield less crunchy chips.
You don’t need to blend the cottage cheese beforehand.

Cottage cheese chips are best enjoyed fresh, as they can soften when stored. You can crisp them up again by rebaking them for a few minutes.
