Instructions:

Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.


Spread the seasoned potatoes in an even layer in the prepared baking dish. Bake for 20 minutes, stirring halfway through.


While the potatoes are baking, season the chicken pieces with the remaining ranch seasoning mix.


Sprinkle the shredded cheddar and mozzarella cheese evenly over the top of the potato and chicken mixture.


Once done, remove from the oven and let it cool slightly. Garnish with fresh parsley for a pop of color and extra flavor.
