Chewy Coconut Bars

Instructions

Preheat oven to 350°F. Line a 9-inch square baking pan with parchment and spray with nonstick cooking spray.

In a medium saucepan over medium-low heat, melt butter and cook until browned, swirling constantly. Remove from heat and whisk in brown sugar until combined.

Whisk in eggs, vanilla, salt, and baking powder until fully incorporated. Fold in flour and coconut.

Pour batter into prepared baking pan. Bake for 20 minutes until set around edges but still slightly soft in the middle.

Allow bars to cool completely in pan before cutting into squares. Store airtight at room temperature for up to 3 days.
