Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Steam the cauliflower florets until tender, about 10 minutes. Drain well and let cool slightly.

In a food processor, pulse the cauliflower until smooth. Transfer to a large bowl.

Add the cheddar cheese, Parmesan cheese, egg, almond flour, chives, parsley, garlic powder, salt, and pepper to the cauliflower. Mix until well combined.

Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

Lightly spray the tops with olive oil spray.

Bake for 20-25 minutes, or until golden brown and slightly crispy on the edges.

Allow to cool slightly before serving.
Variations & Tips
For a spicier version, add a pinch of cayenne pepper or a dash of hot sauce to the mixture. You can also experiment with different cheeses, such as Gruyère or mozzarella, for a unique flavor profile. If you prefer a more robust herb flavor, try adding a teaspoon of dried Italian seasoning. For a dairy-free version, substitute the cheeses with nutritional yeast and use a flax egg in place of the egg.
