Directions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. Steam the cauliflower florets until tender, about 10 minutes. Drain well and let cool slightly.

  3. In a food processor, pulse the cauliflower until smooth. Transfer to a large bowl.

  4. Add the cheddar cheese, Parmesan cheese, egg, almond flour, chives, parsley, garlic powder, salt, and pepper to the cauliflower. Mix until well combined.

  5. Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

  6. Lightly spray the tops with olive oil spray.

  7. Bake for 20-25 minutes, or until golden brown and slightly crispy on the edges.

  8. Allow to cool slightly before serving.
