Prepare the ingredients:

Wash, peel and grate the carrots.

Wash and cut the apples into small cubes (you can leave them with the skin on).

Sprinkle lemon juice over the apples to prevent them from browning.

Mix the base:

In a large bowl, mix the grated carrot and apples.

Prepare the dressing:

In a small bowl, mix the plain yogurt with the mayonnaise (if using), a pinch of salt, and a little more lemon juice if you want a tangy touch.

Join:

Pour the dressing over the carrot and apple mixture.

Add the chopped walnuts and mix everything gently.

Serve:

Garnish with fresh parsley or cilantro and some whole walnuts on top.

Serve cold. Ideal as a starter or side dish.
