Instructions

Cook the beef:
In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

Prepare the filling:
Add the chopped onion and minced garlic to the skillet with the beef. Cook for 2–3 minutes, until softened. Stir in the frozen mixed vegetables, beef broth, Worcestershire sauce, tomato paste, thyme, salt, and pepper. Let the mixture simmer for 5–7 minutes until the vegetables are tender and the liquid is mostly absorbed.

Assemble the pie:
Transfer the beef and vegetable mixture into a 9×13-inch baking dish. Spread the prepared mashed potatoes evenly over the top, smoothing them with a spatula.

Top and bake:
Dot the mashed potatoes with butter. Preheat the oven to 375°F (190°C) and bake for 20–25 minutes, until the top is golden and the edges are bubbling.

Serve:
Let the Shepherd’s Pie rest for 5 minutes before serving.
