Assemble Croissants:
Spread a thin layer of Dijon mustard on the bottom half of each croissant. Layer 2 slices of ham and 1 slice of cheese on top, then place the other half of the croissant on top.
Prepare Butter Topping:
In a small bowl, mix melted butter, garlic powder, and poppy seeds (if using). Brush the butter mixture over the tops of the croissants.
Bake:
Place the croissants on the prepared baking sheet. Bake for 12–15 minutes, or until the cheese is melted and the croissants are golden brown.
