Instructions:
Preheat the Oven: Set your oven to 375°F (190°C). Line a large baking sheet with aluminum foil for easy cleanup.
Prepare the Sauce: In a small bowl, mix together the barbecue sauce, olive oil, apple cider vinegar, smoked paprika, garlic powder, and onion powder.
Season the Chicken: Place the chicken thighs on the baking sheet, skin-side down. Season with salt and pepper.
Apply the Sauce: Brush about half of the sauce mixture over the chicken thighs. Top each thigh with onion rings.
Bake: Bake for 25 minutes. Carefully turn the chicken over, brush with the remaining sauce, and continue baking for another 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
Optional Broiling: For more caramelization, broil for 3-4 minutes, watching closely to prevent burning.
Rest and Garnish: Allow the chicken to rest for 5 minutes before serving. Garnish with chopped fresh parsley if desired.
