Tex-Mex Beef Enchiladas
Ingredients for Tex-Mex Beef Enchiladas Recipe:
1 lb. ground beef
1 medium onion finely chopped
2 cloves garlic minced
2 cups enchilada sauce: You can use store-bought or homemade depending on your preference.
12 corn tortillas
2 cups shredded cheddar cheese
1/2 cup vegetable oil
Salt and pepper to taste
Optional garnishes: Chopped cilantro sour cream, diced tomatoes, and sliced avocados for serving.
Ingredients for Enchilada Sauce:
3 tablespoons olive oil
3 tablespoons flour (you can use whole wheat, all-purpose, or gluten-free blends, they all work great!)
1 tablespoon ground chili powder (if you’re not a fan of spice, feel free to use less or pick a milder chili)
1 teaspoon ground cumin
½ teaspoon garlic powder
¼ teaspoon dried oregano
¼ teaspoon salt, or to taste
A pinch of cinnamon (this one’s optional but really adds nice flavor)
2 tablespoons tomato paste
2 cups vegetable broth
1 teaspoon apple cider vinegar or regular white vinegar
Freshly ground black pepper, to taste
