Caldo de Arroz con Carne Molida
A humble, home-style Mexican rice soup made with ground beef, tomatoes, onion, and rice. It’s hearty, budget-friendly, and perfect for a cozy meal.
Ingredients:
1 lb ground beef
1 cup long grain white rice (rinsed)
1/2 white onion, diced
2–3 ripe tomatoes, chopped (or 1 cup canned diced tomatoes)
1 garlic clove, minced
6 cups water or beef broth
2 tbsp vegetable oil
1/2 tsp cumin
Salt & pepper to taste
Optional: fresh cilantro or lime wedges for serving
Instructions:
Brown the Beef:
In a large pot, heat oil over medium-high heat.
Add ground beef and break it up with a spoon.
Season with salt, pepper, and cumin. Cook until browned. Drain excess fat if needed.
