Ingredients :

2 cups mashed potatoes (about 2-3 large potatoes)

1 cup shredded cheese (cheddar, mozzarella, or your choice)

1/4 cup grated Parmesan cheese

1/4 cup green onions or chives, chopped (optional)

1/2 teaspoon garlic powder

1/2 teaspoon onion powderSalt and pepper to taste

1 cup breadcrumbs (panko or regular)

1-2 eggs, beaten (for binding)Oil for frying (vegetable or canola)
